There are countless stories about the origin of our all-time favorite Sisig. However, there’s a recognized story about a woman in Angeles City, Pampanga who’s hailed as the legendary Sisig Queen. She is the famous Lucia Cunanan or Aling Lucing. The Department of Tourism in our country recognized her to be the one who reinvented Sisig and that her restaurant, “Aling Lucing’s Restaurant”, established Angeles City as the “Sisig Capital of the Philippines”. Aling Lucing’s trademark recipe includes the grilling of pig ears and cheeks then seasoned the dish with vinegar, calamansi juice, chopped onions, chicken liver, and then served on the traditional sizzling plates. Homemade Sizzling Crispy Pork Sisig
Despite Sisig’s ultimate reputation as one of the icons of Filipino cuisine, you shouldn’t be intimidated because all of the ingredients we’ll use can be easily found in nearby local markets and grocery stores. Oh, and the cooking procedures are also relatively easy to follow, so I’m sure you’ll be able to catch up! So, shall we begin?
The ingredients we’ll need are red chili, green chili, calamansi, mayonnaise, red onion, white onion, margarine, Knorr seasoning liquid, egg, red bell pepper, water, charcoal, and the star of the show, pig face. Instead of margarine, you can also use butter. For this recipe, we’ll be using butter for the best results!
To start, we’ll first boil the pig face to make it as tender as possible before we proceed with grilling it. To do that, simply prepare a pot with water and then add the pig face, salt, pepper, and garlic. Keep on cooking the pork until it becomes soft and tender. After boiling, remove the pork from the pot and drain all of the excess water. Prepare the grilling station and grill the pork until it becomes well-cooked and crispy. After that, dice the pork into smaller sizes and set it aside for a while.
And just like that, we’re already halfway done! Now, heat the sizzling plate and add the butter to grease the plate thoroughly. Then, proceed on sauteing the red bell pepper and white onion until their fragrances come out. You can now add the diced pork into the mixture and mix well. Take note that this is the time you turn the heat into low to avoid burns and overcooking. Finally, season the mixture with Knorr seasoning, red onions, chilies, and egg as toppings. Garnish the dish with mayonnaise and calamansi then you’re already good to go!

- ● ½ kilo Pork Face ( boiled and grilled)
- ● 1 pc red chili (labuyo)
- ● 1 pc green chili
- ● 2 pcs calamansi
- ● 1 tbsp mayonnaise
- ● 1 pc red onion ( dice)
- ● 1 small white onion
- ● 1 tbsp margarine or butter
- ● 2 tbsp knorr seasoning liquid
- ● 1 pc egg
- ● 1 pc red bell pepper ( optional)
- ● Water for boiling
- ● Charcoal for grilling
- Boiled the pork with salt, pepper and garlic until soft.
- After boiling , grilled it and cut into small dice.
- Heat the sizzling plate , add butter and saute the red bell pepper, white onion until the fragrances of bell pepper comes out.
- Add the grilled diced pork and turn the heat into low.
- Season with knorr seasoning and add the chillies, top with red onion and egg.
- Garnish with mayonnaise and calamansi.
- Serve and Enjoy!
