This delightful dish is usually prepared during special occasions such as Christmas, Fiestas, wedding parties, and many more. Some people, like my aunt, would always prepare several batches of Embutido a day before the Fiesta, or the bisperas, if you may. These Embutido are then intended to be given to the visitors as pasalubong or takeaway food.
An Embutido is a Philippine meatloaf that is made with ground pork, hard-boiled eggs, sliced ham, and other kinds of sausages. It is traditionally wrapped in aluminum foil and then steamed until well-cooked. For best-tasting results, the Embutido is paired with ketchup and a cup of freshly-cooked rice, yum! Oh, some people would also fry the Embutido before serving it as it gives an additional layer of flavor and texture to it. Sounds good, huh?
The Embutido is similar to the traditional Spanish dish, Morcon because it also uses similar ingredients and cooking procedures. On the other hand, it is also a lot like the famous Hardinera or Marikina Everlasting. Nevertheless, we all know that if there’s an Embutido on the dining table, dinner will always be good!

Homemade Special Embutido Recipe
Don’t worry! This recipe is very simple and all of the ingredients we’ll need are easily found in local grocery stores and markets. The cooking procedure is also easy to follow so I’m sure you’ll be able to catch up. There are two ways to cook the Embutido, it’s either by steaming or baking, for this recipe, we’ll go with the traditional way which is steaming. Alright? Let’s begin!
To start, the ingredients we’ll need are, of course, ground pork, carrot, red bell pepper, onion, garlic, egg, raisins, sweet pickle relish, cheese, milk, salt, pepper, seasoning, margarine, and bread crumbs. You would also want to add hotdogs, cheese, and hard-boiled eggs for the additional toppings. These additional toppings are optional but the more the merrier, right?
Now, we’ll proceed to make the Embutido mixture! To begin, simply pour all of the ingredients one by one into a mixing bowl. Make sure to thoroughly mix them to ensure that all of the flavors are incorporated with one another. And voila! There’s your Embutido mixture. What’s left to do is just to cook it. So, let’s go!
Next up, spread some margarine on the aluminum foil to prevent it from sticking to the mixture. Then, you can now add the Embutido mixture and make sure to flatten it. This is also the time to put in additional toppings such as hotdogs, cheese, and hard-boiled eggs to make the dish even more special. After that, gently roll and wrap the mixture like a sausage. Make sure to seal both ends to ensure that nothing will spill!
After rolling and sealing all of the Embutido, arrange them nicely on the steamer and then cook it for about 45 mins to 1 hour. Remember to let it cool for a bit before taking off the aluminum foil. And just like that, you have successfully made your own version of the traditional Embutido! Serve it with a cup of freshly cooked rice, ketchup, ice-cold soft drinks, and you’re good to go!

- Gently roll and wrap the mixture
- Seal both ends
- Arrange in the steamer and steam for 45mins to 1 hr
- Let it cool before removing the foil
